Recipe: Cyril Lignac's Crispy Hazelnut Chocolate Mousse

Ingredients for 4 servings:

For the mousse:

  • 125 g white chocolate
  • 10 cl + 50 cl 35% full-fat cream
  • 60 g hazelnut spread
  • 80 g dark chocolate shavings (prepared in advance and chilled)
  • 40 g dark chocolate shavings
  • 1 vanilla pod
  • 30 g mascarpone
  • 20 g icing sugar

For the crunch:

  • 10 g Gavottes (crispy crepe flakes)
  • 1 pinch fleur de sel
  • 9 g roasted sesame seeds

Utensils needed: Bain-marie setup with saucepan, whisk, two spatulas, stand mixer with whisk attachment, large chilled bowl, small bowl.

Preparation steps:

  1. Melt the white chocolate with 10 cl liquid cream over a bain-marie, stirring until smooth. Stir in the hazelnut spread.
  2. In a very cold large bowl, combine 50 cl liquid cream and mascarpone. Whip into firm peaks, incorporating vanilla pulp and icing sugar.
  3. Gently fold the whipped cream into the chocolate mixture with a spatula. Add 40 g chocolate shavings. Divide into ramekins or glasses, top with remaining shavings, and refrigerate.
  4. Just before serving, mix crumbled Gavottes, fleur de sel, and sesame seeds. Sprinkle over the mousse.
