Daily Spinach and Leafy Greens Intake Linked to 11 Years Younger Brain Function, Rush University Study Finds

Spinach has long been celebrated as a nutritional powerhouse. Far from the cartoon myth of Popeye's instant muscles, its real benefits include high fiber for better digestion, vitamin B9 (folate) essential during pregnancy, and nitrates that enhance cerebral blood flow to support brain health.

Even more compelling: Consuming spinach daily, along with other leafy greens like kale, can rejuvenate brain function by the equivalent of 11 years, according to researchers at Rush University in Chicago.

The study tracked the diets and cognitive abilities of 950 adults averaging 81 years old, with assessments at one, two, and ten years. Results showed that those eating the most leafy greens—1 to 2 servings daily—experienced significantly slower cognitive decline. Their brains functioned like those 11 years younger compared to non-consumers.

"These benefits stem from their rich vitamins and nutrients," explained Dr. Martha Clare Morris at the Boston Biology Conference. For optimal absorption, pair spinach with vitamin C—try a squeeze of lemon juice or segments of tangerines.
