How to Make Cyril Lignac's Passion Fruit Tiramisu
Preparation time: 15 minutes
Chilling time: overnight
Serves: 4
Ingredients:
- 25 cl passion fruit juice
- 10 cl mango juice
- 12 spoon cookies (ladyfingers)
- 3 organic eggs
- 35 g honey
- 50 g caster sugar
- 360 g mascarpone
- 4 passion fruits
- 1 peeled green kiwi
- 1 lime
Instructions:
- Combine passion fruit and mango juices. Dip the spoon cookies (ladyfingers) and arrange them in the base of your dish.
- Separate the egg yolks from the whites.
- In a bowl, whisk the honey with the yolks, then incorporate the mascarpone until smooth.
- Beat the egg whites with the caster sugar to stiff peaks. Gently fold a portion into the mascarpone mixture with a whisk, then fold in the remaining whites to keep it airy.
- Pour half the cream over the cookies. Refrigerate overnight.
- Finely dice the kiwi (brunoise), scoop out the passion fruit pulp, mix together, and spoon over the set mousse. Grate lime zest on top before serving.
