During the holiday season, homemade gourmet desserts bring joy to every gathering. The classic Yule log, whether iced or rolled, is a festive essential that delights guests all December long. Our favorite? This creamy Apple, Vanilla, and Nutella® Yule Log—comforting, flavorful, and simple to make at home. Let's dive into the recipe.

Ingredients for 18 servings:

  • 3 egg yolks
  • 100g of sugar
  • 250g whole milk
  • 300g whipping cream
  • 2 vanilla pods
  • 16g gelatin sheets
  • 18 boudoirs
  • 450g of apples
  • 270g of Nutella® (15g of Nutella per person)

Step-by-Step Preparation

  1. Soak 8g of gelatin sheets in cold water to soften. Dice the apples finely. In a saucepan, combine apples, 30g powdered sugar, and 2 tablespoons water. Simmer for 10 minutes.
  2. Drain the gelatin and add to the pan, stirring until fully dissolved. Transfer the apple mixture to a mold and freeze.
  3. Soak another 8g of gelatin sheets in cold water. In a saucepan, heat 50g whipping cream, milk, and vanilla pods until just before boiling. Meanwhile, whisk egg yolks with 75g sugar in a bowl.
  4. Pour the hot mixture into the egg yolks, stirring constantly. Return to low heat, stirring with a wooden spoon until thickened (avoid lumps). Drain and stir in gelatin until dissolved. Whip remaining cream to soft peaks and fold into the custard.
  5. Pour half the vanilla custard into the cake tin. Add the frozen apple insert. Top with remaining custard.
  6. Arrange the boudoirs (ladyfingers) on top and freeze for 4 hours.
  7. Unmold onto a serving plate and chill. Before serving, pipe Nutella® decoratively over the log.
