After considering a move to California, they brought its vibrant culture to Paris by launching Cali Sisters on March 2020—the very first day of lockdown. They pivoted to takeaway, and their "grilled-cheese zaatar" became an instant hit with the confined crowd. The adventure took off from there. The restaurant fully opened its doors on June 9, 2020, at 17 rue Notre-Dame-des-Victoires in Paris's 2nd district. Soon after came Cali Uptown on rue de Paradis.
