How to Make Cyril Lignac's Hazelnut Financier

Ingredients
• 90g hazelnut powder
• 150g icing sugar
• ½ vanilla pod
• 60g flour
• 4 egg whites
• 100g butter
• 1 pinch of fine salt
• Icing sugar for decoration

Preparation

  • Preheat the oven to 185°C.
  • In a pan, melt the butter until it turns a hazelnut color. Pour into a ramekin and set aside.
  • In a bowl, combine the flour, hazelnut powder, icing sugar, fine salt, and vanilla pod pulp. Gradually whisk in the egg whites one by one. Fold in the browned hazelnut butter. Transfer to a buttered and floured cake pan.
  • Bake for 20 minutes.
  • Once baked, unmold onto a wire rack and dust with icing sugar.
