Homemade Kombucha Recipe: Step-by-Step Guide

To brew homemade kombucha, gather these ingredients:

  • black tea or green tea,
  • 250 ml cane sugar,
  • boiling water,
  • 2.5 L of spring water,
  • 1 SCOBY,
  • 500ml plain kombucha.

Kombucha recipe steps:

  1. Bring the water to a boil, then pour into a large bowl. Steep the tea for 5 to 10 minutes.
  2. Remove the tea and stir in the sugar until fully dissolved.
  3. Add the spring water. Let the mixture cool to room temperature.
  4. Pour into a 4-liter glass jar, add the plain kombucha, and place the SCOBY on top.
  5. Cover with a cloth secured by a rubber band.
  6. Store in a dark, room-temperature spot for 7 to 10 days.
  7. Transfer to glass bottles. Consume chilled as is, or proceed to second fermentation for flavor and fizz.
  8. For second fermentation, add juice, fruit, or herbs at room temperature.
  9. Wait 1-2 days for bubbles, then refrigerate to halt fermentation.
