  5. Cover with a cloth secured by a rubber band.
  6. Store in a dark, room-temperature spot for 7 to 10 days.
  7. Transfer to glass bottles. Enjoy chilled plain, or proceed to second fermentation for flavor and fizz.
  8. For second fermentation, add juice, fruit, or herbs at room temperature.
  9. Wait 1-2 days for bubbles, then refrigerate to halt fermentation.
